Good Eats: Bulgogi





The bodybuilders and other fitness enthusiasts are going to love today's food, because it has plenty of protein. Today, we're going to talk about bulgogi!

The meaning of bulgogi is "fire meat" referring to the open flame grill that is normally used to cook the meat.

Bulgogi is used with choice cuts of beef.  Before cooking, the beef is soaked in a marinade of soy sauce, sesame oil, sugar, garlic, pepper, and other ingredients to enhance flavor.

What about making the meat tender? Tenderizing the meat simply breaks down the collagens in meat to make it easier to chew and makes for an overall more pleasant eating experience. There are a few ways that you can tenderize meat, such as pounding, but bulgogi often uses the method of enzymes in certain foods. How do they do this? They simply marinate with onions. Onions contain an enzyme that tenderizes the meat. 

To eat, the meat is usually wrapped in a piece of lettuce or mint leaf with a piece of garlic and slice of spicy green pepper and dipped in a variety of sauces, but mainly ssamjang. Of course, you can't really enjoy this without chasing it down with a shot of soju.

So, there you have it. That's today's featured food. What's great about living in Korea is that if you're someone who is always hunting for high-quality protein-rich foods, there is really no shortage of places to eat.
